Asian Chicken and Broccoli

A delicious and heart-healthy Asian-inspired dish, perfect for lowering cholesterol levels.
Ingredients
- 1 lb skinless, boneless chicken breasts, cut into bite-sized pieces
- 2 cups broccoli florets
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tbsp sesame oil
- 1/4 cup low-sodium chicken broth
- 1 tbsp cornstarch
- 2 tbsp water
- 2 green onions, chopped (for garnish)
- 1 tbsp sesame seeds (for garnish)
Instructions
In a small bowl, mix together soy sauce, rice vinegar, honey, sesame oil, and chicken broth. Set aside.
In a separate bowl, dissolve cornstarch in water to make a slurry. Set aside.
In a large skillet or wok, heat some oil over medium-high heat. Add chicken pieces and cook until browned and cooked through. Remove chicken from the pan and set aside.
In the same skillet, add a bit more oil if needed. Add garlic and ginger, and sauté until fragrant.
Add broccoli florets to the skillet and stir-fry for a few minutes until slightly tender.
Pour the soy sauce mixture over the broccoli and bring to a simmer. Add the cornstarch slurry and stir until the sauce thickens.
Add the cooked chicken back to the skillet and toss to coat in the sauce.
Serve the chicken and broccoli over brown rice or quinoa. Garnish with chopped green onions and sesame seeds.
