Middle Eastern Inspired Chickpea and Spinach Stew

A delicious and heart-healthy stew inspired by Middle Eastern flavors, packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 4 cups fresh spinach
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent.
Add minced garlic, cumin, coriander, turmeric, and cinnamon. Cook for another minute until fragrant.
Stir in chickpeas, diced tomatoes, and vegetable broth. Bring to a simmer and cook for 15 minutes.
Add fresh spinach and cook until wilted. Season with salt and pepper to taste.
Serve the stew hot, garnished with fresh parsley. Enjoy!
