Mexican-Inspired High Cholesterol-Lowering Wimdhfstx Tnq

A heart-healthy and cholesterol-lowering Mexican-inspired dish rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until quinoa is cooked.
In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, avocado, cherry tomatoes, and cilantro.
In a small bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper.
Pour the dressing over the quinoa mixture and toss to combine.
