Fiber-Rich Lemon Herb Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil

- 1/4 teaspoon black pepper
- 1 cup low-sodium chicken broth
- 1 cup quinoa
- 2 cups water
- 2 cups broccoli florets
- 1 cup cherry tomatoes, halved

Instructions
Preheat the oven to 375°F (190°C).
In a small bowl, combine olive oil, garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper to make a marinade.
Place chicken breasts in a baking dish and pour the marinade over them. Let them marinate for 30 minutes.
Bake the chicken in the preheated oven for 25-30 minutes, or until cooked through.
While the chicken is baking, cook quinoa according to package instructions in low-sodium chicken broth for added flavor.
Steam broccoli until tender-crisp.
