Mexican-inspired Soluble Fiber Chicken

A delicious Mexican-inspired chicken recipe packed with heart-healthy ingredients that support a diet aimed at lowering high cholesterol.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup low-sodium chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
- Avocado slices, for serving
Instructions
In a large skillet, heat olive oil over medium heat.
Add onion and garlic, sauté until fragrant.
Add chicken breasts to the skillet, season with chili powder, cumin, paprika, salt, and pepper. Cook until browned on both sides.
Add bell pepper, black beans, diced tomatoes, and chicken broth to the skillet. Cover and simmer for 20 minutes or until chicken is cooked through.
Garnish with fresh cilantro and serve with avocado slices.
