Ingredients
- 1 cup rolled oats
- 2 cups vegetable broth
- 1 cup mixed vegetables (such as bell peppers, broccoli, and carrots)
- 1/2 cup tofu, cubed
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ginger, minced
- 1/4 teaspoon garlic, minced
- 1 green onion, chopped
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
In a medium pot, bring the vegetable broth to a boil.
Add the rolled oats and mixed vegetables to the pot. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
In a separate pan, heat the sesame oil over medium heat. Add the tofu cubes and cook until golden brown.
Add the soy sauce, ginger, garlic, and green onion to the tofu. Cook for another 2-3 minutes.
Season the oatmeal soup with salt and pepper to taste. Serve in bowls and top with the tofu mixture and sesame seeds.
