French-inspired Soluble Fiber Rich Vegan Dish

A delicious and heart-healthy French-inspired dish packed with soluble fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 cup quinoa
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup kalamata olives, pitted and sliced
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
Cook quinoa according to package instructions. Once cooked, fluff with a fork and let it cool.
In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, parsley, and kalamata olives.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
Pour the dressing over the quinoa salad and toss to combine.
