Asian-Inspired Vegetable Cheese Sandwich

A delicious and heart-healthy sandwich filled with vegetables and plant-based protein, perfect for lowering high cholesterol.
Ingredients
- 4 slices whole grain bread
- 1/2 cup sliced onions
- 1/2 cup sliced tomatoes
- 1/2 cup sliced capsicum
- 1/2 cup shredded low-fat cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
Heat olive oil in a pan over medium heat.
Add sliced onions, tomatoes, and capsicum to the pan. Saute until vegetables are tender, about 5 minutes.
Season with garlic powder, black pepper, and salt.
Toast the whole grain bread slices until golden brown.
Divide the sautéed vegetables evenly on 2 bread slices.
Sprinkle shredded low-fat cheese on top of the vegetables.
Top with the remaining bread slices to form sandwiches.
Cut the sandwiches in half and serve hot.
