Indian Spiced Chicken with Lentils and Spinach

A flavorful and heart-healthy Indian-inspired chicken dish with lentils and spinach.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1 cup dried lentils, rinsed and drained
- 2 cups chicken broth
- 2 cups baby spinach
- Salt and pepper to taste
Instructions
Heat olive oil in a large skillet over medium heat.
Add chopped onion, garlic, and ginger. Cook until softened, about 5 minutes.
Stir in cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for another 1-2 minutes until fragrant.
Add chicken breasts to the skillet and cook for 6-8 minutes per side until cooked through.
Meanwhile, in a separate pot, bring chicken broth to a boil. Add lentils and reduce heat to simmer. Cook for 20-25 minutes until lentils are tender.
Stir in baby spinach to the lentils until wilted.
Season chicken and lentils with salt and pepper to taste.
Serve the Indian spiced chicken over a bed of lentils and spinach. Enjoy!
