French-Inspired Chicken for Lowering Cholesterol

Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 cup low-sodium chicken broth
- 1/4 cup white wine
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Instructions
In a large skillet, heat olive oil over medium heat.
Add chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove from skillet and set aside.
Add onion and garlic to the skillet, and sauté until softened, about 3 minutes.
Stir in cherry tomatoes, spinach, chicken broth, white wine, Dijon mustard, and thyme leaves. Bring to a simmer.
Return chicken breasts to the skillet, cover, and cook for another 10-15 minutes, or until chicken is cooked through.
Season with salt and pepper to taste.
Serve the French-inspired chicken with vegetables hot, garnished with additional thyme leaves if desired.
