Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika

  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced

  • 1 avocado, sliced

Instructions

Preheat the oven to 400°F (200°C).
In a small bowl, mix olive oil, cumin, paprika, garlic powder, chili powder, salt, and pepper.
