Asian-inspired Soluble Fiber Rich Imrl Tzrwgwt

A delicious and heart-healthy Asian-inspired dish rich in soluble fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.

Ingredients

  • 1 cup of quinoa
  • 1 can of chickpeas, drained and rinsed
  • 1 cup of edamame beans
  • 1 red bell pepper, diced
  • 1 small cucumber, diced
  • 1 avocado, diced
  • 2 green onions, thinly sliced
  • 1/4 cup of fresh cilantro, chopped
  • 1/4 cup of sesame seeds
  • For the dressing:
  • 3 tablespoons of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of sesame oil
  • 1 tablespoon of maple syrup
  • 1 teaspoon of grated ginger
  • 1 clove of garlic, minced

Instructions

Cook quinoa according to package instructions and let it cool.
In a large bowl, combine the cooked quinoa, chickpeas, edamame beans, red bell pepper, cucumber, avocado, green onions, cilantro, and sesame seeds.
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, maple syrup, ginger, and garlic to make the dressing.
Pour the dressing over the quinoa mixture and toss to combine.
