French-Inspired Lentil Salad with Herbs and Lemon Dressing

This flavorful and heart-healthy lentil salad is rich in soluble fiber, plant-based proteins, and healthy fats. It is designed to support a diet aimed at lowering high cholesterol, while avoiding saturated fats, cholesterol, and refined sugars.
Ingredients
- 1 cup green or brown lentils
- 3 cups water
- 1/2 red onion, finely diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions
Rinse the lentils under cold water. In a medium pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 25-30 minutes or until lentils are tender.
In a large bowl, mix together the cooked lentils, red onion, cherry tomatoes, cucumber, parsley, and mint.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
Pour the dressing over the lentil mixture and toss to combine. Adjust seasoning if needed.
