Ingredients

  • 2 eggs

Instructions

In a bowl, whisk the eggs with soy sauce, ginger, turmeric, salt, and pepper.
Heat olive oil in a skillet over medium heat. Add garlic and onions, sauté until fragrant.
Add mushrooms, bell peppers, and tomatoes to the skillet. Cook until vegetables are tender.
