Ingredients

  • 1 lb boneless, skinless chicken breast, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated

  • 1 cup shiitake mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1 carrot, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • Salt and pepper to taste
  • Sliced green onions for garnish

Instructions

In a large pot, heat some oil over medium heat. Add the diced chicken and cook until browned.
Add the chopped onion, garlic, and ginger to the pot. Cook until fragrant.
Pour in the broth and bring to a simmer.
Add the mushrooms, bok choy, carrot, soy sauce, sesame oil, and rice vinegar. Season with salt and pepper.
Simmer for 20-25 minutes until the vegetables are tender and the chicken is cooked through.
