Refreshing Cucumber Salad

A delicious and heart-healthy cucumber salad inspired by American cuisine, perfect for supporting a diet aimed at lowering high cholesterol.
Ingredients
- 2 large cucumbers, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup apple cider vinegar
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey or maple syrup
- Salt and pepper, to taste
Instructions
In a large bowl, combine the sliced cucumbers, red onion, parsley, and mint.
In a separate small bowl, whisk together the apple cider vinegar, olive oil, lemon juice, honey or maple syrup, salt, and pepper.
