Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 2 tbsp ground flaxseed
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • Cooking spray

Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cut the chicken breasts into bite-sized nuggets.
In a shallow dish, mix together the breadcrumbs, ground flaxseed, oregano, garlic powder, salt, and pepper.
Dip each chicken nugget into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
Place the coated chicken nuggets on the prepared baking sheet and lightly spray with cooking spray.
Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the coating is crispy.
Serve hot with a side of roasted vegetables or a mixed green salad.
