Asian-Inspired Brown Rice Bowl

A delicious and heart-healthy Asian-inspired rice bowl packed with soluble fiber, plant-based proteins, and healthy fats to help lower cholesterol levels.

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snow peas
  • 1 block firm tofu, cubed
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds, for garnish
  • 2 green onions, chopped, for garnish

Instructions

In a medium saucepan, combine the brown rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until the rice is tender and water is absorbed.
In a large wok or skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
Add bell pepper, broccoli, and snow peas to the wok. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
Push the vegetables to one side of the wok and add tofu cubes. Cook for 3-4 minutes until lightly browned.
In a small bowl, whisk together soy sauce, rice vinegar, and sesame oil. Pour over the tofu and vegetables in the wok. Stir to combine.
Divide the cooked brown rice among serving bowls. Top with tofu and vegetable stir-fry mixture. Garnish with sesame seeds and chopped green onions.
