Fiber-Rich Chicken Curry

A delicious and heart-healthy chicken curry recipe packed with fiber-rich ingredients to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 cup low-sodium chicken broth
- 1/2 cup light coconut milk
- 2 cups spinach leaves
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large skillet, heat some olive oil over medium heat.
Add the onion, garlic, and ginger. Sauté until fragrant.
Add the chicken cubes and cook until browned on all sides.
Stir in the curry powder, turmeric, and cumin. Cook for another minute.
Add the diced tomatoes, chickpeas, and chicken broth. Bring to a simmer.
Cover and cook for 20 minutes, stirring occasionally.
Stir in the coconut milk and spinach leaves. Cook until the spinach wilts.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
