Mediterranean-Inspired Beef Bowl

A flavorful and heart-healthy beef bowl inspired by Mediterranean cuisine, packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 lb lean beef, sliced into strips
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 bell peppers, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups cooked quinoa or brown rice
- Fresh parsley for garnish
Instructions
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
Add the beef strips and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil.
Add the onion, bell peppers, zucchini, and cherry tomatoes. Cook until vegetables are tender, about 5-7 minutes.
Add the cooked beef back to the skillet. Season with oregano, paprika, salt, and pepper. Cook for another 2-3 minutes.
To serve, divide the quinoa or brown rice among 4 bowls. Top with the beef and vegetable mixture.
