French-Inspired Soluble Fiber-Rich Onhwg

A heart-healthy and cholesterol-lowering recipe inspired by French cuisine, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 can of chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, diced
- 1 cup of cherry tomatoes, halved
- 1/4 cup of chopped parsley
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions
In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat, cover, and simmer for 15-20 minutes until the quinoa is cooked.
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until fragrant.
Add the bell pepper, zucchini, and chickpeas to the skillet. Cook for 5-7 minutes until vegetables are tender.
Stir in the cooked quinoa, cherry tomatoes, parsley, thyme, paprika, salt, and pepper. Cook for another 2-3 minutes.
