Indian-Inspired P Thekc

Ingredients
- 1 cup chickpea flour
- 1/2 cup water
- 1/2 cup chopped spinach
- 1/4 cup chopped tomatoes
- 1/4 cup chopped onions
- 1/4 cup chopped cilantro
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1 tbsp olive oil
Instructions
In a mixing bowl, combine chickpea flour, water, turmeric powder, cumin powder, chili powder, and salt to form a smooth batter.
Add chopped spinach, tomatoes, onions, and cilantro to the batter and mix well.
Heat olive oil in a non-stick pan over medium heat.
Pour a ladleful of the batter onto the pan and spread it out into a round shape to form a pancake-like structure.
Cook for 3-4 minutes on each side until golden brown and crispy.
Serve hot with a side of chutney or yogurt.
