French-Inspired Zucchini and Lentil Casserole

A delicious and heart-healthy French-inspired casserole dish made with zucchini, lentils, and a variety of flavorful herbs and spices.
Ingredients
- 1 cup green lentils, rinsed
- 2 cups vegetable broth
- 2 medium zucchinis, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1/4 cup chopped fresh parsley
Instructions
Preheat the oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
Add the zucchini slices to the skillet and cook until slightly softened.
Stir in the lentils, vegetable broth, thyme, rosemary, paprika, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, until the lentils are tender.
Transfer the mixture to a baking dish and bake in the preheated oven for 20 minutes, until the top is golden brown.
Sprinkle with chopped parsley before serving.
