Spicy Indian Chickpea Salad

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 red onion, thinly sliced
  • 1 jalapeno, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp cumin powder
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

In a large bowl, combine chickpeas, cucumber, bell pepper, red onion, jalapeno, cilantro, and mint.
In a small bowl, whisk together olive oil, lemon juice, cumin powder, turmeric, paprika, salt, and pepper.
Pour the dressing over the salad and toss until well combined.
Cover and refrigerate for at least 15 minutes to allow flavors to meld.
