Ingredients
- 1 cup cooked lentils
- 1 cup mixed vegetables (such as bell peppers, carrots, and peas)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp chili powder
- 1 can (14 oz) diced tomatoes
- 1/2 cup coconut milk
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large pan, heat olive oil over medium heat.
Add chopped onion, garlic, and ginger. Sauté until fragrant.
Add turmeric, cumin, coriander, and chili powder. Cook for another minute.
Add mixed vegetables and cook until slightly softened.
Stir in diced tomatoes and coconut milk. Bring to a simmer.
Add cooked lentils and season with salt and pepper. Cook for 10-15 minutes.
Garnish with fresh cilantro before serving.
