Fiber-Rich Asian Noodle Bowl

A delicious and heart-healthy noodle bowl inspired by Asian flavors, packed with soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 8 oz whole wheat noodles
  • 2 tbsp sesame oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas
  • 1 block tofu, cubed
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tsp ginger, grated
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1 tbsp sesame seeds

Instructions

Cook the noodles according to package instructions. Drain and set aside.
In a large wok or skillet, heat sesame oil over medium heat. Add onion and garlic, sauté until fragrant.
Add bell pepper, broccoli, carrot, snap peas, and tofu. Cook for 5-7 minutes until vegetables are tender-crisp.
In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, and ginger. Pour over the vegetable mixture and tofu. Cook for another 2-3 minutes.
Add the cooked noodles to the wok and toss everything together to combine.
Divide the noodle mixture into bowls. Garnish with green onions, cilantro, and sesame seeds.
