Indian-inspired Chicken Breast Rice Vegetable

A delicious and heart-healthy recipe featuring chicken breast, rice, and vegetables with Indian-inspired flavors.
Ingredients
- 2 boneless, skinless chicken breasts, diced
- 1 cup brown rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 tablespoon olive oil
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large skillet, heat olive oil over medium heat.
Add onions and garlic, sauté until translucent.
Add diced chicken breasts, turmeric, cumin, coriander, cinnamon, salt, and pepper. Cook until chicken is browned.
Add bell pepper, zucchini, and broccoli. Cook for another 5 minutes.
In a separate pot, cook brown rice according to package instructions.
Serve the chicken and vegetable mixture over the cooked brown rice.
Garnish with fresh cilantro before serving.
