Mediterranean-Inspired Fish and Rice with Avocado

A delicious and heart-healthy meal featuring fish, rice, and avocado with Mediterranean flavors.
Ingredients
- 1 lb white fish fillets (such as cod or halibut)
- 1 cup brown rice
- 2 avocados, sliced
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
Preheat the oven to 400°F (200°C).
Cook the brown rice according to package instructions.
In a small bowl, mix together the lemon juice, garlic, oregano, paprika, cumin, salt, and pepper.
Place the fish fillets on a baking sheet lined with parchment paper. Brush the fish with the lemon juice mixture.
Bake the fish in the preheated oven for 15-20 minutes, or until cooked through.
In a skillet, heat olive oil over medium heat. Add the cooked brown rice and sauté for 5 minutes.
Serve the fish over the sautéed brown rice, top with sliced avocado, and enjoy!
