Indian-Inspired Chicken Curry

A flavorful and heart-healthy chicken curry inspired by Indian cuisine, perfect for those looking to lower high cholesterol levels.
Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 can diced tomatoes
- 1 can coconut milk
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cinnamon
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large non-stick skillet, cook the diced chicken until browned. Remove from skillet and set aside.
In the same skillet, add the onion, garlic, and ginger. Sauté until fragrant.
Add the diced tomatoes, coconut milk, turmeric, cumin, coriander, cinnamon, salt, and pepper. Stir to combine.
Bring the mixture to a simmer, then add the cooked chicken back to the skillet. Simmer for another 15-20 minutes.
Garnish with fresh cilantro before serving.
