Paneer

A delicious and heart-healthy version of traditional Indian Paneer made with heart-healthy ingredients.
Ingredients
- 1 block of firm tofu, pressed and cubed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1 cup diced tomatoes
- 1 cup spinach, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large pan, heat olive oil over medium heat.
Add the onion, garlic, and ginger. Saute until onion is translucent.
Add the turmeric, cumin, coriander, and cayenne pepper. Cook for another minute.
Stir in the tomatoes and simmer for 5 minutes.
Add the cubed tofu and spinach. Cook for another 5 minutes.
Season with salt and pepper to taste.
Garnish with fresh cilantro and serve hot with brown rice or whole wheat roti.
