Mediterranean-Inspired Larrynon

A delicious and heart-healthy Larrynon recipe inspired by Mediterranean flavors, perfect for lowering high cholesterol.
Ingredients
- 1 cup lentils, cooked
- 1 can chickpeas, drained and rinsed
- 1 large eggplant, cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
In a large mixing bowl, combine lentils, chickpeas, eggplant, bell peppers, zucchini, onion, and garlic.
Drizzle olive oil over the vegetables and lentils. Sprinkle with oregano, basil, salt, and pepper. Toss to coat evenly.
Spread the mixture onto a baking sheet in a single layer.
Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly charred.
