Asian-Inspired Soluble Fiber Noodle Veggie Bowl

A delicious and heart-healthy Asian-inspired noodle bowl packed with soluble fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.

Ingredients

  • 2 oz rice noodles
  • 1 cup broccoli florets
  • 1/2 red bell pepper, thinly sliced
  • 1/2 carrot, julienned
  • 1/4 cup edamame beans
  • 1/4 cup sliced mushrooms
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil
  • 2 tbsp low-sodium soy sauce
  • 1 tsp ginger, grated
  • 1 tbsp rice vinegar
  • 1/2 tsp sriracha sauce (optional)
  • 1 tbsp sesame seeds for garnish
  • Fresh cilantro for garnish

Instructions

Cook rice noodles according to package instructions. Drain and set aside.
In a large skillet, heat sesame oil over medium heat. Add garlic, ginger, and green onions. Sauté for 2 minutes.
Add broccoli, bell pepper, carrot, edamame, and mushrooms to the skillet. Cook for 5-7 minutes until vegetables are tender-crisp.
Add cooked noodles to the skillet. Pour in soy sauce, rice vinegar, and sriracha sauce. Toss everything together to combine.
Divide the noodle and veggie mixture into bowls. Garnish with sesame seeds and fresh cilantro.
