Asian-Inspired Low Cholesterol Chicken

A delicious and heart-healthy Asian-inspired chicken recipe designed to support a diet aimed at lowering high cholesterol.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp freshly grated ginger
  • 1/2 tsp red pepper flakes
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1 tbsp sesame seeds

Instructions

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes.
Place chicken breasts in a resealable plastic bag and pour half of the marinade over them. Seal the bag and let marinate in the refrigerator for at least 30 minutes.
Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side, or until cooked through.
In the meantime, heat a large skillet over medium heat. Add the remaining marinade, broccoli, bell pepper, and carrot. Cook for 5-6 minutes, or until vegetables are tender-crisp.
Slice the grilled chicken and serve over the stir-fried vegetables. Garnish with green onions, cilantro, and sesame seeds.
