Asian Inspired Chicken

A delicious and heart-healthy chicken recipe inspired by Asian flavors, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 1/2 cup sliced bell peppers
- 1/2 cup sliced snap peas
- 1 tablespoon sesame oil
- 1 tablespoon chopped green onions
- 1 tablespoon sesame seeds
Instructions
In a small bowl, mix together soy sauce, rice vinegar, honey, ginger, and garlic. Marinate chicken breasts in this mixture for 15 minutes.
Heat sesame oil in a skillet over medium heat. Add chicken breasts and cook for 5-7 minutes on each side, or until cooked through.
Add bell peppers and snap peas to the skillet and cook for an additional 2-3 minutes, until vegetables are tender-crisp.
Sprinkle green onions and sesame seeds over the chicken and vegetables. Serve hot.
