Mexican-Inspired Quinoa Black Bean Bowl

A delicious and heart-healthy Mexican-inspired dish that supports a diet aimed at lowering high cholesterol. This quinoa black bean bowl is rich in soluble fiber, plant-based proteins, and healthy fats, while avoiding saturated fats, cholesterol, and refined sugars.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- Juice of 1 lime
- Salt and pepper, to taste
Instructions
In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed.
In a large bowl, combine cooked quinoa, black beans, corn, bell pepper, avocado, and cilantro.
In a small bowl, whisk together cumin, chili powder, garlic powder, lime juice, salt, and pepper. Pour over quinoa mixture and toss to combine.
Divide the quinoa black bean mixture into 4 bowls and serve. Enjoy!
