Mediterranean Style Fillet Couscous

A heart-healthy Mediterranean inspired fillet couscous recipe rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 2 fillets of white fish (such as cod or tilapia)
- 1 cup whole wheat couscous
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 2 tbsp fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Season the fish fillets with salt, pepper, and a drizzle of olive oil. Place them on a baking sheet and bake for 15-20 minutes, or until cooked through.
In a large bowl, prepare the couscous according to package instructions.
Once the couscous is ready, fluff it with a fork and add in the cherry tomatoes, cucumber, red onion, olives, and parsley. Mix well.
Drizzle the couscous salad with olive oil, lemon juice, salt, and pepper. Toss to combine.
Divide the couscous salad onto plates and top each with a baked fish fillet. Serve warm and enjoy!
