Asian-Inspired S mr w for Lowering High Cholesterol

A delicious and heart-healthy S mr w recipe inspired by Asian flavors, designed to support a diet aimed at lowering high cholesterol. This recipe is rich in soluble fiber, plant-based proteins, and healthy fats while avoiding saturated fats, cholesterol, and refined sugars.
Ingredients
- 1 cup of quinoa, cooked
- 1 block of extra-firm tofu, cubed
- 2 tablespoons of sesame oil
- 1 red bell pepper, sliced
- 1 cup of broccoli florets
- 2 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 3 tablespoons of low-sodium soy sauce
- 1 tablespoon of rice vinegar
- 1 tablespoon of maple syrup
- 1 teaspoon of sriracha sauce
- 1/4 cup of chopped green onions
- 1 tablespoon of sesame seeds
Instructions
In a large skillet, heat 1 tablespoon of sesame oil over medium heat.
Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
In the same skillet, add the remaining tablespoon of sesame oil.
Add the red bell pepper, broccoli, garlic, and ginger. Sauté for 5 minutes until the vegetables are tender.
In a small bowl, whisk together the soy sauce, rice vinegar, maple syrup, and sriracha sauce.
Add the cooked quinoa and tofu to the skillet, then pour the sauce over the mixture. Stir well to combine.
Cook for an additional 2-3 minutes until everything is heated through.
Remove from heat and sprinkle with chopped green onions and sesame seeds before serving.
