Italian-Inspired High-Fiber Cholesterol-Lowering Xpiyfcbe

A heart-healthy Italian-inspired dish rich in soluble fiber, plant-based proteins, and healthy fats, perfect for lowering high cholesterol levels.
Ingredients
- 1 cup whole wheat pasta
- 1 can chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
Cook whole wheat pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sauté until translucent.
Add diced red bell pepper and zucchini to the skillet, cook until slightly tender.
Stir in cherry tomatoes, chickpeas, dried oregano, dried basil, salt, and pepper. Cook for another 5-7 minutes.
Add cooked pasta to the skillet, toss everything together until well combined.
Garnish with fresh parsley before serving.
