Asian-Inspired High-Fiber Poulet

A delicious and heart-healthy Asian-inspired Poulet recipe packed with high-fiber ingredients to support a diet aimed at lowering high cholesterol.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snow peas
- 1/2 cup sliced water chestnuts
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1 tablespoon cornstarch
- 1/4 cup low-sodium chicken broth
- Cooked brown rice or quinoa, for serving
Instructions
In a bowl, mix soy sauce, sesame oil, garlic, and ginger. Add chicken breasts and marinate for 15 minutes.
In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side until cooked through. Remove from skillet and set aside.
In the same skillet, add bell peppers, snow peas, and water chestnuts. Cook for 2-3 minutes until slightly tender.
In a small bowl, mix cornstarch and chicken broth. Pour into the skillet and stir until thickened.
Slice the cooked chicken breasts and add back to the skillet. Stir to combine with the vegetables.
Serve the Poulet over cooked brown rice or quinoa. Garnish with chopped green onions and cilantro.
