Asian-inspired Uz Uawap Recipe

A delicious and heart-healthy Asian-inspired dish aimed at lowering high cholesterol, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 tablespoon sesame oil
- 2 tablespoons low-sodium soy sauce
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame seeds
- Green onions for garnish
Instructions
Cook quinoa according to package instructions.
In a large skillet, heat sesame oil over medium heat.
Add diced bell pepper, broccoli, snap peas, ginger, and garlic. Saute for 5-7 minutes until vegetables are tender-crisp.
Add chickpeas, soy sauce, rice vinegar, and honey/maple syrup. Cook for another 2-3 minutes.
Stir in cooked quinoa and mix well to combine all ingredients.
Sprinkle sesame seeds on top and garnish with chopped green onions.
