Mediterranean Quinoa Bowl

A delicious and heart-healthy Mediterranean-inspired quinoa bowl packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and liquid is absorbed.
In a large mixing bowl, combine the cooked quinoa, chickpeas, bell pepper, cucumber, red onion, olives, parsley, and mint.
In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and pepper. Pour over the quinoa mixture and toss to combine.
