Indian Milk Chicken

A delicious and heart-healthy Indian-inspired chicken dish that is low in cholesterol and saturated fats.

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup low-fat milk
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp cayenne pepper
  • 1 cup spinach, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

In a large bowl, marinate the chicken pieces with turmeric, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper. Let it sit for 10 minutes.
In a large skillet, heat olive oil over medium heat. Add onions, garlic, and ginger. Cook until onions are translucent.
Add the marinated chicken to the skillet and cook until browned on all sides.
Pour in the low-fat milk and bring to a simmer. Cover and cook for 15-20 minutes, or until chicken is cooked through.
Stir in chopped spinach and cook for an additional 5 minutes.
Serve hot with brown rice or whole wheat naan.
