Indian-Inspired Vuxmgg

A delicious and heart-healthy Indian-inspired dish rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup lentils
- 1 cup quinoa
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 can coconut milk
- 2 cups vegetable broth
- 2 cups spinach, chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
In a large pot, heat olive oil over medium heat.
Add onion and garlic, sauté until translucent.
Stir in turmeric, cumin, coriander, and paprika, cook for 1 minute.
Add lentils, quinoa, coconut milk, and vegetable broth. Bring to a boil.
Reduce heat, cover, and simmer for 20 minutes or until lentils and quinoa are cooked.
Stir in spinach and cook until wilted.
Season with salt and pepper to taste.
Serve hot and enjoy!
