Italian-Inspired Jlag Gim Yvzl

A delicious and heart-healthy Italian-inspired dish that supports a diet aimed at lowering high cholesterol, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup lentils, cooked
- 1 cup quinoa, cooked
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 can diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
In a large pan, heat olive oil over medium heat.
Add diced onion and garlic, sauté until fragrant.
Add diced bell pepper and zucchini, cook until vegetables are tender.
Stir in cooked lentils, quinoa, diced tomatoes, oregano, basil, salt, and pepper. Cook for another 5-10 minutes.
Serve the Jlag Gim Yvzl hot, garnished with fresh parsley.
