French-Inspired Klzokosod

A heart-healthy dish rich in soluble fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 cup quinoa, cooked
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup walnuts, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions
Preheat the oven to 375°F (190°C).
In a large mixing bowl, combine the cooked quinoa, chickpeas, red bell pepper, red onion, garlic, parsley, and walnuts.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
Pour the dressing over the quinoa mixture and toss to coat evenly.
Transfer the mixture to a baking dish and bake for 30-40 minutes, or until heated through and slightly crispy on top.
