Mexican-Inspired Bean and Quinoa Bowl

A delicious and heart-healthy Mexican-inspired bowl packed with fiber, plant-based protein, and healthy fats.
Ingredients
- 1 cup cooked quinoa
- 1 can black beans, rinsed and drained
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1/2 red onion, thinly sliced
- 1 lime, juiced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
In a large bowl, combine the cooked quinoa, black beans, corn, bell pepper, avocado, cilantro, and red onion.
In a small bowl, whisk together the lime juice, cumin, chili powder, salt, and pepper.
Pour the dressing over the quinoa mixture and toss to combine.
Serve the bean and quinoa mixture in bowls and enjoy!
