Indian Vegetarian Stir Fry

A delicious and nutritious Indian vegetarian stir fry recipe designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 tbsp olive oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 1 cup green beans, trimmed
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp red chili powder
- Salt to taste
- 1/4 cup plain yogurt (optional)
- Fresh cilantro for garnish
Instructions
Heat olive oil in a large pan over medium heat.
Add onion, garlic, and ginger. Saute until fragrant, about 2 minutes.
Add bell pepper, broccoli, carrots, and green beans. Cook for 5-7 minutes until vegetables are tender-crisp.
Sprinkle turmeric, cumin, coriander, red chili powder, and salt over the vegetables. Stir well to combine.
If using yogurt, stir it in now to create a creamy texture.
Cook for another 2-3 minutes to heat through.
Garnish with fresh cilantro before serving.
