Lemon Crinkle Cookies

Ingredients
- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1/2 cup coconut sugar
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened applesauce
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup powdered stevia for rolling
Instructions
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine whole wheat flour, almond flour, coconut sugar, coconut oil, applesauce, lemon zest, lemon juice, baking powder, and salt. Mix until a dough forms.
Scoop out tablespoon-sized portions of dough and roll into balls. Roll each ball in powdered stevia to coat.
Place the coated dough balls on the prepared baking sheet and flatten slightly with a fork.
Bake in the preheated oven for 12 minutes, or until the edges are golden brown.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
