Lemon Bar Cookies

Delicious lemon bar cookies that support a diet aimed at lowering high cholesterol, packed with heart-healthy ingredients.
Ingredients
- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/4 cup lemon juice
- Zest of 1 lemon
- 2 tbsp chia seeds
- 1/4 tsp baking soda
- Pinch of salt
Instructions
Preheat the oven to 350°F (180°C) and line a baking pan with parchment paper.
In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, lemon juice, lemon zest, chia seeds, baking soda, and salt. Mix well to form a dough.
Press the dough into the prepared baking pan, spreading it evenly. Bake for 20-25 minutes, or until the edges are golden brown.
Remove from the oven and let it cool completely before cutting into bars.
