Soluble Fiber Oatmeal

A heart-healthy oatmeal recipe rich in soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 1 cup rolled oats
  • 2 cups water or plant-based milk
  • 1 ripe banana, mashed
  • 1 tbsp chia seeds
  • 1 tbsp ground flaxseeds
  • 1/2 tsp cinnamon
  • 1/4 cup berries of choice
  • 1 tbsp chopped nuts or seeds (optional)

Instructions

In a saucepan, bring the water or plant-based milk to a boil.
Add the rolled oats, mashed banana, chia seeds, flaxseeds, and cinnamon. Stir well.
Reduce heat to low and simmer for 10 minutes, stirring occasionally.
Once the oatmeal reaches your desired consistency, remove from heat and let it sit for a few minutes.
Serve hot topped with berries and chopped nuts or seeds, if desired.
